Yesterday evening we had a lot of fun making ravioli from scratch.
I still have to clean the flour from my clothes 🙂
As you know, the ravioli are filled. If you put them in the refrigerator the humidity of this filling can ruin the dough. When you cook the ravioli, in boiling water (or even before), this increased the possibility that they will break up.
The solution is easy: put them in the freezer in a tupperware container or in a plastic bag.
To cook them, just put them (still frozen) in gentle boiling water for 5-7 minutes. You know that the altitude can affect the cooking time, right? So it will be different if you cook them here in Colorado Springs or at home.
